SWAMPED!!!

We received a complaint from an anonymous frequent reader that it has been several weeks since we've posted. Every time we post, we are apologizing for our absence. Alas, we are mustering up energy to update you on life and food.

School has been hectic. Chelsea's mornings are nearly flawless, while the afternoons provide challenges with defiant children. Funny enough, those challenging children were once my kindergarten students (dodged a bullet there!) However, despite those two afternoon classes, Clase de espanol es muy bueno, amoebas. Chelsea has been doing pilates and making super sweet lattes. She's also been working really hard planning for her school year and studying for the GRE. BTW, THAT'S THIS UPCOMING WEEKEND! We are leaving The Valley tomorrow to go to San Antonio and Austin for the Labor Day Weekend. We will stop in San Antonio Friday and Saturday because Chelsea takes the GRE on Saturday. We are confident that it will go well. She is currently out for the count (our principal has subtly implied that female teachers should wear uncomfortable heels because they are more professional than flats. Her feet hurt.) But the lattes are getting her through!

5th grade has its ups and downs. We've taken a quiz and a test and the results weren't pretty. One student, when given the definition for "Physical Properties", instead of using the words in the word bank to match with the definition, he decided to write in "SCIENCE"... definitely not one of the choices. They do, however, enjoy experiments and we've done the acetone/styrofoam cup experiment which they loved. Overall, they're better than the little ones.

On to food matters. I have gone back to making bread. After a month and half hiatus I finally found the time to make some dough and bake some bread. As you may recall, the last attempt was ok, but "kneaded" (get it!) a lot of work. There's actually no kneading involved, BUT I took Mary's advice and added an 1/8 cup more flour and the dough was no longer sticky and easy to work with. SUCCESS!!! I'm still trying to get the outside to brown a little and since Sunday, I've made 2 loaves, one of which I took to work and had my co-workers try. They liked it, one thought it was too salty which I agreed with. Here are some pictures!


Tonight, Chelsea found a sweet recipe on Cooking Light's website for one of our favorite dishes: risotto. It's a recipe for risotto with fresh mozzarella, basil, and grape tomatoes. We tweaked it by cutting out the basil (we couldn't find fresh basil) and we used parmesan cheese instead of mozzarella (it's kind of pricey), as well as spinach. What we ended up with was very delicious. It tasted like something that should be unhealthy, but with the ingredients we used, it turned out to be relatively healthy. Anyways, we dropped the ball on the pictures, but here is the recipe.
  • 3 tablespoons balsamic vinegar
  • 4 1/2 cups fat-free, less-sodium chicken broth
  • 2 tablespoons extravirgin olive oil, divided
  • 1 1/2 cups Arborio rice or other medium-grain rice
  • 1/3 cup dry white wine
  • 1/4 cup half-and-half
  • 1 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 cup halved grape tomatoes
  • 1/4 cup chopped fresh basil
  • 5 ounces parmesan cheese

Preparation

Place vinegar in a small, heavy saucepan; bring to a boil over medium heat. Cook until slightly syrupy and reduced to 1 tablespoon (about 4 minutes). Set aside.

Bring broth to a simmer in a medium saucepan (do not boil). Keep warm.

Heat 1 tablespoon oil in a large saucepan over medium-high heat.

Add rice; cook 2 minutes, stirring constantly. Stir in wine, and cook 1 minute or until liquid is nearly absorbed, stirring constantly.

Stir in 1 cup broth; cook 5 minutes or until liquid is nearly absorbed, stirring constantly. Reduce heat to medium. Add remaining broth, 1/2 cup at a time, stirring constantly until each portion of broth is absorbed before adding the next (about 25 minutes total).

Stir in half-and-half, salt, and pepper; cook 2 minutes. Remove from heat; stir in tomatoes, basil, and cheese.

Place about 1 cup risotto into each of 6 shallow serving bowls; drizzle each serving with 1/2 teaspoon balsamic syrup and 1/2 teaspoon oil.

Yay for the weekend!

EXCITING THINGS about today:

1. Mom and Dad are getting here tonight!!

2. We are going to San Antonio this weekend!!

3. I just requested off 5 days in the coming 2 months. :) 2 days when Edwin has surgery, 3 days for Easter!

4. I'm coming home for Easter!!! I'm flying back Wednesday, March 31st in the morning. I'm leaving Monday, April 5th in the morning. A nice loooong weekend.

In other news... My cart has a bum wheel. So not only do I not have a classroom, I now don't have a cart either. Dang. So now I can be found roaming around the halls lugging a big tub. Lovely.

Edwin and I have created a blog. Radical, I know. I will let it speak for itself: elementarycooking.blogspot.com. Think about the title, it's funny. (Get it?? We are elementary teachers and trying to cook.) NOW, let it be known: We are NOT trying to upstage nor replace the fabulous marycrockerbarnes blog. It actually has a shout out on the new blog. Same topic, different spin. Now when you are blog surfing you have yet ANOTHER one to check. OH, the glory of it all.

I'm a registered Texan

It's done. FINALLY!!! I have dragged out becoming a Texan (aka registering and licensing my vehicle) for 3 months. Today was the final step. I took my car to Pep Boys, where they used saws and drills and jackhammers (ok, maybe not that extreme) to remove my rusted on Wisconsin license plate. Apparently the ice, salt and snow had rusted my license plate screws all the way to the inside of the car. When I got to Pep Boys they told me labor was $98/hr, and they weren't really sure they could get it done. Luckily for me, Hispanic mechanics think I'm cute (or are just very nice) and did it for $25. Edwin was with me and it all went very smoothly. Now I am just waiting for my driver's license to come in the mail (see previous post about the DMV in a laundromat), and I will be a full legal Texan.

....Would you go to Taco Palenque at midnight with your friends and see a mariachi band standing outside. 

...Would you have a high of 85 degrees on January 23rd.

I've learned to take delight in small moments. For example, I'm sitting in my cubicle preparing for my day. I'm in a decent mood, and all is well. BUT THEN. The taco lady comes through the door with her stash of freshly made breakfast tacos. Gloriousness. For 1$. Imagine that.

Bad Day

Today was one of those days that made me think about quitting. I was weighing my options... How much do I really need to finish TFA in order to "launch" whatever unknown career I finally decide on??? Bleh. We are testing all week. You would think that kids would naturally respect the test. Fear the test, maybe. No? No? Too tall an order. My 2nd and 3rd graders have been APES this week. Maybe circus people is better. Literally, there were headstands and cartwheels going on in my 2nd grade. I DID NOT ASK FOR THIS. Oh wait. I did sign up.

When all is awry, I look at pictures of Brady and smile. The thought of him macking on his mom's face makes me giggle, and life is okay again. Until tomorrow at 2:00 anyway.

New Toys

I've been thinking about getting a Wii for awhile now... and today was the big day. (For those of you who don't know, the Nintendo Wii is a gaming system that translates your real life movements onto the screen and makes your character do what you are doing.) I was looking at them online and planning on having it shipped to my apartment.... but instead the afternoon transpired like this:

Edwin and I are sitting on the couch in my apartment looking at Wii's online. All of a sudden we come to the realization that we could go get one at Target and still play today. As we quickly get ready to leave, Edwin says, "This is why our lives suck during the week." I'm thinking, because we don't play Wii everyday? He meant because we get incredibly excited about the prospect of playing Wii while my roommate Lydie and probably every other TFA-er in the country is diligently planning lessons. I think it's why we get along so well :) Don't worry, we still get our work done!

Lo and behold, I now have a Wii. I used my graduation money to get it (I know you are thinking, wow Chel, you saved that money almost a whole year? You betcha.), and I got a Wii Fit too. I'm pretty excited about it- the Wii Fit customizes workouts for you, and you can do yoga, cardio, etc. I'll keep you posted on its greatness. 

HEB superstar


So, Edwin is a rock star. We went grocery shopping at HEB today and he hopped onto this bad boy and took it for a spin. It makes a loud beeping sound when he puts it in reverse- it's pretty sweet. All of the elderly people at the story were seriously jealous.

Who needs 2 legs?!

Most of you know that Edwin hurt his knee while skiing on Monday. I told him it's a pretty "badass" injury.... you can't just tear your ACL/MCL sitting on the couch. We all feel horrible, but he's a champ- keeps a smile on his face and has stayed positive the whole time. Here are some pics of his time recuperating on the couch!

It was so fun having Brady around this Christmas, and I can't wait until next year when he understands a little more of what's going on!

TGIF

Snapshot of my day:

By 9:15 this morning, a 4th grader had already balled up his fist to hit another kid, redirected his anger to me, flipped over a desk, then went into the hallway where he proceeded to tell me that he would rather kill the kid and go to jail than find a better solution (like, say, talking about it?)... he then proceeded to run outside yelling "I'm going home!!!".

By 9:30 this morning, a different 4th grader (with Asperger's, mind you)- upon my attempts to straighten his desk with the row- screamed at me "DON'T FU**ING TOUCH MY DESK!!!!!!"

Musings

First, I really like my new decor. Very seasonal. I hope everyone has been plowed out- I was blown away by the pictures Mom sent me of the snow back home!! Despite the low temps here last week (low 4os), the weather is back to "normal" and was in the high 70s today. 

I've been thinking.... as I frequently do during the day.... about how much I dislike my job. Really, it's not for me. But a thought has occurred to me. It is a luxury to enjoy your job. Seriously- out of 6 billion (or are we at 7 now?) people on this planet, how many people truly do what they love and get paid for it? I would bet maybe 1%??? If that??? Beyond that- even being able to choose your line of work is a blessing. So many people have to take low-wage, manual labor jobs in crappy conditions to support their families. Many have to work more than one of those jobs at a time. I have chosen this predicament!! 

When I get down to the nitty gritty, I have a lot to be thankful for. A salary, for one. No snow :). An incredibly supportive family. I work with my boyfriend. Comparatively speaking, 35 kids in a room who don't take you seriously and would rather be anywhere else is not that bad. Right??? Anybody with me?? 

So when I get depressed and threaten to give my 2 weeks, please remind me of this :) Thank the good Lord that Christmas break is coming.

OH PS We have our work Christmas party on Friday night and they do "Academy Awards" nominated and voted on by the staff. I am nominated for Best Dressed (woop woop) and "Staff or Student???"- which means no one can tell if you are staff or student. HA. Edwin is up for that category as well hahah

We have a tree!

Our foot high Christmas tree! Lydie and I played Christmas music and decorated our tree tonight- we also opened up the first day of the advent calendar! It is officially DecemBRRR!

We have furniture!!!

I came back from a wonderful Thanksgiving break to find FURNITURE!!!! And ARTWORK on the wall!!! And a mini Christmas tree! It's almost too much to handle. No more standing at the counter to eat meals. No more sitting on our laptops on the floor. We are real adults now!!

Musings

Here are a few musings:

Yesterday I didn't teach, because the Spanish teachers were administering Interim Assessments to kids with modifications (oral administration, etc). I finished testing at about 11, and had the rest of the day free to work/plan. I plugged away in my cubicle for most of the afternoon.... and at the end of the day, realized what a great day it was! It was great for the obvious reason of not begin completely exhausted from dealing with children all day... but it made me think! My personality type (therefore me) prefers to work mostly alone, in a quiet environment. I had more energy last night, and even made a wonderful dinner (chicken parm with veggies). It made me think that maybe after this 2 year deal, I should pursue a career that would meld better with my personality. I do like teaching.... some days.... and I like kids.... most days.... (I promise, I don't think that is a lie) but it would be so nice to not have a job that completely poops me out!

On another note.... today I took one of my certification exams. It went pretty well- I feel much better about it than I did about the History exam, and Lord knows I passed that, so things might be okay :) It felt good to use my brain. I don't feel like teaching challenges me mentally as much as emotionally/physically. Hmm.... what to do with my life..... back to the age-old question :)

More exams

P.S. The teaching certification people finally caught up with me, and I am now signed up to take exams this week to continue on the path to becoming a "highly qualified teacher". Wednesday I take the Early Childhood-4th grade Generalist exam, which I am taking the day off for. On Thursday I am taking the 4-8 Generalist exam at 5:00 (after work). Phew!!! Keep me in your prayers please, that I have extra energy that day!

I don't want to grow up...

...I'm a Toys R Us kid?! Maybe not. However, I did have a pretty grown-up weekend.

1. I signed up for car insurance!!!
2. I got my car inspected so I can get Texas license plates. (eek)
3. Lydie (my roommate) and I bought a couch!

I guess I'm an adult now.

In other more exciting news, I'm coming home to Wisconsin in 6 days! Woo hoo!! Can't wait to see all of your shining faces and gobble down some turkey. I am still in partial disbelief that it is almost Thanksgiving... I got sunburned yesterday manning the inflatable obstacle course at our school's Harvest Fest, and it was 90 degrees out. Strange. I went to the mall today though and Santa was there... so I guess maybe Christmas is just around the corner!
