Updates

There's been a request for an update. :) I guess I've been a little slackerish on my blogging lately. I have however, been enjoying the A team's blog. I think the fact that I'm currently living out of my car and sleeping on a friend's couch may be cause for my lack of posting. NEWS on my end:

I officially moved out of my house in Minneapolis (hence the couch sleeping). My new lease begins on Sept. 1.

Monday is my last day of work for the summer! YAY! I'm heading back to Altoona on Tuesday morning.

Lilian is coming to Altoona on Tuesday!

Lilian and I are going to LA, California on Saturday the 16th to stay with Margaret Meinen. Woohoo!

One of my classes for fall semester got canceled. Boo. Upside: I can rearrange my schedule (my favorite thing to do) so that I only need 2 classes Spring semester to graduate!

I went salsa dancing last night! It was SO much fun. AND I got to speak a lot of Spanish. Earlier in the day I had gone to the Lake St area to Mercado Central, where they have a lot of little Mexican restaurants. I had delicious tacos and spoke Spanish with the cashier. So it was a very Spanish filled day, which was great. I absolutely love speaking Spanish.

I turn 22 in 11 days!

I copied down a lot of recipes this summer while at the library, and I am very excited to try some of them out. If you want me to cook for you, let me know!


Alright, well that's the news on my end. I've been enjoying watching the Olympics this weekend. Hope you all are doing well!

Hey Chel! I'm cooking dinner for Ceej tomorrow night and trying out a recipe that my host mom made a lot: chicken pie. I'm pretty dang excited!! It is the first homemade meal I've ever made for Ceej (not counting macaroni and cheese,tacos, and buttered spaghetti with parm). Let me know if you find any delicious recipe for me to try, since I'm sure I'll become quite the chef myself (ha--yeah right). I've posted the recipe and directions below, and I'll let you know if it turns out! :) I hope you're having a blast in Cali, wish I could be there soaking up the sun with you (although I did go to Fair Fax pool with Jess today... which is just as beautiful and fulfilling).

Chicken Pie:
2 sheets of filo pastry
1 leek or spring onion
2 or 3 skinless chicken breasts
1 small can of corn
1 chicken stock cube
1/2 to 1 cup of water
1 tbs. flour
1 tbs. milk

directions:
Preheat oven to 375. Fry leek/onion until it's transparent and put it aside. Dice the chicken and cook until brown. Add flour. Put 1/2 cup boiling water with stock cube in the chicken's fry pan mixture. Stir until saucy. Add leek and can of corn. Line pastry in pan, pour in ingredients, put pastry on top. Spread the tbs of milk on the top and then put in the oven! The only dilemma I have is that I forgot to say how long you cook it for... so I probably will end up burning the thing. Anyway enjoy! It's delicious! :)
